Logistics for Fresh Produce
Moving fresh produce from field to shelf involves more than refrigeration. Fruits and vegetables are living products that continue to ripen, respire, and lose moisture after harvest, which means logistics decisions about timing, handling, and atmosphere directly determine how much of what was picked actually reaches a consumer in sellable condition.
Unlike packaged or frozen goods, fresh produce continues biological processes after leaving the field — respiration consumes the product's own sugars and releases heat, while ripening gases like ethylene can accelerate spoilage in nearby items. Logistics for produce is therefore as much about managing a living biological process as it is about moving a physical object from point A to point B.

Produce logistics also involves grading for size and quality immediately after harvest, packing in ventilated containers that allow airflow without physical damage, and increasingly, lot-level traceability that can trace a batch back to a specific field and harvest date — a requirement that food safety recalls make essential rather than optional.
